What is the normal operating temp. after warm up on 1275 Sprite? Mine at 60 mph steady ranges from 180 to near 200 degrees. Seems to hot to me. Causes?

180 - 200 is the normal operating temp range. But your thermostat will determine where your engine should be running. If you have a 180 thermostat then 200 is too warm. Running too warm could mean the radiator needs attention, timing may be wrong, carbs may be too lean, water pump drive belt is too loose, any number of causes.
